Garden-Fresh Tomatoes & Herbs

Looking for new ways to enjoy the summer bounty of tomatoes available at local farmers markets? Today, we have easy ways to season tomatoes with common herbs.

Oregano & Basil 

You are probably familiar with oregano. It is a common spice used in pizza sauce. We think you will not be disappointed if you try pairing oregano with basil. Combining these two spices creates a wonderful aroma that will get your appetite going. We paired oregano and basil in this simple no-cook pasta sauce.

No-Cook Pasta Sauce

Ingredients:Cooking with herbs

  • 6 medium-sized tomatoes (chopped coarsely)
  • 1½ tsps fresh oregano (chopped finely)
  • 1½ tsp fresh basil (chopped finely)
  • ¼ cup olive oil
  • Juice of ½ lemon (1 Tbsp)
  • ¼ cup parmesan cheese
  • 1 package whole wheat pasta

Preparation:

  1. Place tomatoes in large serving bowl.
  2. Add oregano, basil, olive oil, and lemon juice to tomatoes and stir until well mixed. 
  3. Set aside.
  4. Prepare whole wheat pasta (package directions). Rinse and drain pasta.
  5. Add pasta to tomato mixture and stir.
  6. Serve with parmesan cheese to taste.

ONIE Tip: This easy to make pasta sauce can be used as a substitute for other tomato sauces. For example, substitute it for the tomato sauce in this Eggplant Parmesan recipe.

Tarragon

Tarragon’s nickname is dragon's wort but it has a lovely sweet licorice taste. It is a great seasoning for a spaghetti dish that the children will wolf down.

Easy Tarragon Pasta Sauce

Ingredients: Easy herb pasta sauce from ONIE

  • 6 medium-sized tomatoes (chopped coarsely)
  • 1½ tsps fresh tarragon (chopped finely)
  • ¼ tsp ground pepper
  • ½ cup fresh mushrooms chopped
  • 1 Tbsp olive oil
  • ¼ cup parmesan cheese
  • 1 package whole wheat pasta

Preparation:

  1. Prepare pasta according to package directions.
  2. Meanwhile, in a medium-sized saucepan, heat oil on medium. Add tomatoes, tarragon, and pepper. Stir, mixing together. Cook 5 minutes, stirring occasionally.
  3. Add mushrooms. Cook 3 minutes longer.
  4. Remove from heat, and add to cooked pasta.
  5. Serve with parmesan cheese to taste.
