ONIE Goes Live with Cooking Videos
Recipes prepared by ONIE are tested to make sure they are tasty, easy to prepare, and budget friendly... and of course Hearty, Healthy, & Homemade. We now offer a new feature – cooking demonstration of the top 5 recipes chosen for the Hearty, Healthy & Homemade 2015 Nutrition Calendar. It is always easier to do something the first time if you have the opportunity to watch someone else do it first. I love cooking shows for just this reason; I get to see each step being done and how the finished product looks before I try the recipe.
To introduce the videos, we are featuring Ham & Veggie Frittata this week. A wintery mix is in the forecast for Saturday morning and I am thinking a Ham & Veggie Frittata is a nice hearty breakfast for a cold morning. A frittatta is very similar to quiche but easier to prepare.
Ham & Veggie Frittata
Servings: 9 Estimated Time: 35 minutes
1/2 cup frozen onion & bell pepper mix
1/2 cup chopped frozen spinach
1/2 cup chopped frozen broccoli
1 lb cooked ham, diced
1 medium tomato, diced
1 1/2 cups shredded part skim mozzarella cheese, divided
1 tsp garlic powder
Nonstick cooking spray
- Preheat oven to 425°F.
- In a microwave-safe dish add onion & pepper mix, spinach & broccoli. Microwave to defrost at 50% power 3 minutes. Drain water from vegetables. Add ham & tomato. Mix well.
- In a small bowl, mix eggs, 1 cup cheese & garlic powder.
- Spray square glass baking dish with cooking spray. Spread vegetable & ham mixture evenly in dish. Pour egg mixture over vegetables. Top with remaining cheese.
- Bake 20-25 minutes, or until frittata is set. To check, insert a knife in the middle. If ready, it will come out clean.
