It has all your favorite summer veggies: bell peppers, zucchini, yellow squash, and tomatoes. These colorful vegetables are sources of protective antioxidants and Vitamin C. In addition, this dish is low in sodium and high in fiber. With all of these health benefits, there is no need to feel guilty because it tastes so good.

 

Savy Chef Tip: We served the Summer Squash Sauté over a bed of couscous instead of rice. Couscous is an inexpensive whole-grain and can be found at most local groceries. It is a good source of lean protein and fiber but is also a significant source of many vitamins and minerals. Couscous is quick to prepare, and foolproof. Just add it to boiling water, stir, cover, remove from heat, and allow it to sit for 10 minutes.
