Leftover Turkey Enchiladas
Leftover Turkey Enchiladas is a great way to change up your typical Thanksgiving leftovers routine.
It takes 30 minutes to bake and serves 8. No leftovers left but still craving turkey? Use 1lb ground turkey isntead!

Ingredients:                                                                   
  • 2 Tbsp olive oil
  • 3 cups of  leftover turkey, shredded    
  • 1 jalapeno, seeded & finely chopped
  • 1 large yellow onion, sliced, divided
  • 1 tsp ground cumin
  • 1/4 tsp black pepper
  • 2 cups grated Monterey Jack cheese, divided
  • 1 (14 oz) can red chili enchilada sauce
  • 8 corn tortillas, warmed
  • Fresh cilantro leaves, for serving
 
Preparation:

  1. Preheat oven to 425°F.
  2. In a large bowl, add jalapenos, onion, cumin, pepper, half of cheese, & leftover turkey.
  3. Spread 1/2 enchilada sauce across bottom of baking dish. Roll up turkey mixture in tortillas (about 1/3 cup per tortilla) & place seam-side down on baking dish.
  4. Top with remaining enchilada sauce & cheese. Bake 15-20 minutes uncovered or until sauce is bubbling & cheese is melted. Serve topped with cilantro.

Depending on how you seasoned your turkey you may not need to use as many spices!
