Creamy Salsa Chicken Skillet

This one-skillet recipe is loaded with chicken, rice, and black beans, while being full of flavor.


  • 2 cups instant brown rice

  • 2 Tbsp olive oil

  • 1 lb boneless, skinless chicken breasts, diced

  • 2 cloves garlic, minced

  • 1 Tbsp *Taco Seasoning

  • 1 cup *Chunky Salsa 

  • 1 (15 oz) can no-salt-added black beans, drained & rinsed

  • 1 cup frozen corn 

  • 1/3 cup nonfat Greek yogurt

  • 1/4 cup crumbled queso fresco 

  • 1/2 cup fresh cilantro, minced


  1. Prepare rice according to package directions. Fluff with a fork & set aside.

  2. In a large deep skillet, heat oil over medium. Add chicken, garlic & taco seasoning. Sauté 5-7 minutes or until chicken is cooked through, stirring occasionally.

  3. Reduce heat to medium-low. Add salsa, beans & corn. Cook 4-5 minutes or until warm. Remove from heat & stir in yogurt.

  4. Serve over rice topped with cheese & cilantro.


Substitute feta cheese in place of crumbled queso fresco.
