Garlic Chicken Arepas

A popular food item in South American countries, this recipe is filled with incredible flavor.

Ingredients

  • 3 cups warm water

  • 2 1/2 cups pre-cooked white corn flour 

  • Non-stick cooking spray

  • 2 ripe avocados

  • 1 tsp black pepper

  • 2 tsp garlic powder

  • 1/2 cup olive oil mayonnaise

  • 2 (12.5 oz) cans chunk chicken breasts, drained & shredded

  • 1 cup fresh cilantro, minced

  • 1/2 medium red onion, finely diced


Preparation

  1. In a medium bowl add water & slowly mix in flour. Mix well. Form eight dough balls with your hands, then smash into discs about 1 inch thick.

  2. Lightly coat a medium skillet with cooking spray & heat over medium. Add dough & cook 6-7 minutes per side until toasted on both sides. Set aside.

  3. In a large bowl, add avocados & mash with a fork. Add pepper, garlic, mayonnaise, chicken, cilantro & onion. Mix well.

  4. Cut arepas in half & serve stuffed with chicken & avocado mixture. Note: final inner texture is similar to that of a tamale.


Tips

For spicier Arepas, add 1 tsp of cayenne pepper.
