Roasted Tomatillo Chicken & Rice Bowls

A delicious recipe sure to fill you up.


  • 2 cups instant brown rice

  • 1 cup cilantro

  • Non-stick cooking spray

  • 1 lb boneless skinless chicken breasts

  • 2 large bell peppers

  • 1 lb fresh tomatillos, skins removed

  • 10 cloves of garlic, peeled

  • 2 jalapeños

  • 1 lime, juiced

  • 1/2 cup plain nonfat Greek yogurt


  1. Preheat oven to 450°F.

  2. Cook rice according to package directions. Fluff with a fork & set aside.

  3. Lightly coat roasting pan with cooking spray then add chicken, peppers, tomatillos, garlic and jalapeños. Roast 30 minutes or until chicken is cooked through. 

  4. Blend cilantro, lime juice, and roasted tomatillos and garlic to create tomatillo sauce. 

  5. Serve shredded chicken and roasted bell peppers over rice topped with tomatillo sauce and yogurt.


Add tortilla chips to give it a crunch!
