Southern Chicken Cornbread Casserole

  • Non-stick cooking spray

  • 1 (12.5 oz) can chunk chicken breasts, drained & shredded

  • 3 green onions, sliced

  • 2 jalapeños, diced

  • 1 Tbsp minced fresh thyme

  • 1 Tbsp garlic powder

  • 1 cup shredded cheddar cheese

  • 1 ¾ cups cornmeal

  • 1 1/2 tsp baking powder

  • 1 cup 1% low-fat milk

  • 1 1/2 cups plain non-fat Greek yogurt

  • 2 large eggs

  • 2 cups frozen corn


  1. Preheat oven to 375°F. Lightly coat a large glass baking dish with cooking spray.

  2. In a large bowl, mix chicken, onions, jalapeños, thyme & garlic powder. Stir in cheese. Spread mixture evenly into baking dish.

  3. In another large bowl, add cornmeal, baking powder & milk. Mix well. Stir in yogurt, eggs & corn. Spread evenly over chicken mixture.

  4. Bake 30 minutes or until golden brown. To check, insert a knife in the middle. If ready, it will come out clean.


Take out chicken to serve as a side dish! This dish can be made with leftover chicken.
