Orange Chipotle Chicken
2 cups instant brown rice
1/4 cup chopped fresh cilantro
1/2 tsp chili powder
1/4 tsp cumin
1 lb boneless, skinless chicken breasts
1 Tbsp olive oil
1/2 cup orange juice
2 Tbsp maple syrup
2 Tbsp chopped chipotle peppers in adobo sauce
Cook rice according to package directions. Fluff with fork, ad cilantro & set aside.
In a small bowl, mix chili powder & cumin. Season both sides of chicken with spice mix.
In a large skillet, heat oil over medium-high. Cook chicken 8-10 minutes per side or until cooked through.
Add juice & syrup to skillet & cook 1-2 minutes to thicken sauce, stirring constantly. Remove from heat, stir in peppers.
Serve chicken over rice & spoon extra sauce over chicken.
