Orange Chipotle Chicken
This flavorful chicken recipe is an easy and healthy dinner idea that can be prepared in just 30 minutes.
- 2 cups instant brown rice
- 1/4 cup chopped fresh cilantro
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 1 lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 1/2 cup orange juice
- 2 Tbsp maple syrup
- 2 Tbsp chopped chipotle peppers in adobo sauce
- 2 cups instant brown rice
- 1/4 cup chopped fresh cilantro
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 1 lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 1/2 cup orange juice
- 2 Tbsp maple syrup
- 2 Tbsp chopped chipotle peppers in adobo sauce
- Cook rice according to package directions. Fluff with fork, ad cilantro & set aside.
- In a small bowl, mix chili powder & cumin. Season both sides of chicken with spice mix.
- In a large skillet, heat oil over medium-high. Cook chicken 8-10 minutes per side or until cooked through.
- Add juice & syrup to skillet & cook 1-2 minutes to thicken sauce, stirring constantly. Remove from heat, stir in peppers.
- Serve chicken over rice & spoon extra sauce over chicken.
