Sweet Potato Skillet Chili

Ingredients
  • 1 lb 90/10 lean ground beef
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1 (10 oz) pkg frozen onion & bell pepper mix
  • 4 cloves garlic, minced
  • 1 Tbsp no-salt-added tomato paste
  • 1 large unpeeled sweet potato, diced
  • 2 (14.5 oz) cans no-salt-added diced tomatoes, drained
  • 1 cup water
  • 1 (15 oz) can no-salt-added black beans, drained & rinsed
  • 1 Tbsp chopped fresh cilantro
  • 1/2 cup shredded cheddar cheese
  • chopped green onions, optional

  • 1 cup water
  • 1 (15 oz) can no-salt-added black beans, drained & rinsed
  • 1 Tbsp chopped fresh cilantro
  • 1/2 cup shredded cheddar cheese
  • chopped green onions, optional
Preparation
  1. In a large, deep skillet, heat oil over medium-high. Add beef break it up with a spoon & cook 2-3 minutes or until brown, stirring throughout.
  2. Stir in oregano, cumin, chili powder & paprika. Mix thoroughly.
  3. Add onion & bell pepper mix, garlic & sauté 3-4 minutes. Stir in tomato paste & cook 1-2 minutes more.
  4. Add sweet potato, tomatoes, water, beans & stir to combine. Reduce heat to low, cover & simmer 20 minutes, or until potatoes are fork tender, stirring occasionally. 
  5. Remove from heat & stir in cilantro. 
  6. Evenly divide chili into bowls, top with cheese & serve.
