Spicy Red Lentil Soup
2 Tbsp olive oil
1 large onion, diced
4 large unpeeled red potatoes, diced
4 cloves garlic, minced
2 tsp coriander
1 tsp cumin
1 tsp turmeric
1/2 tsp paprika
1/4 tsp cinnamon
1/2 tsp pepper
4 cups 33% less sodium chicken broth
2 (14.5 oz) cans no-salt added diced tomatoes
2 cups water
2 cups dried red lentils, rinsed
Pinch of crushed red pepper flakes
Juice of one lemon
In a small bowl combine coriander, cumin, turmeric, paprika, cinnamon & pepper. Set aside.
In a large saucepan heat oil over medium-high.
Add onions and cook 3 minutes, or until tender.
Add garlic, spice mixture & cook 1 minute.
Add broth, tomatoes & bring to a boil.
Pour mixture into large (5-6 quart) crockpot.
Stir in lentils & potatoes.
Cook on high 4-5 hours, or on low 8-10 hours.
Stir in pepper flakes & lemon juice just before serving.
