Spicy Red Lentil Soup

Ingredients

  • 2 Tbsp olive oil
  • 1 large onion, diced
  • 4 large unpeeled red potatoes, diced 
  • 4 cloves garlic, minced
  • 2 tsp coriander
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cinnamon
  • 1/2 tsp pepper
  • 4 cups 33% less sodium chicken broth
  • 2 (14.5 oz) cans no-salt added diced tomatoes 
  • 2 cups water
  • 2 cups dried red lentils, rinsed
  • Pinch of crushed red pepper flakes
  • Juice of one lemon

Preparation

  1. In a small bowl combine coriander, cumin, turmeric, paprika, cinnamon & pepper. Set aside. 
  2. In a large saucepan heat oil over medium-high.
  3. Add onions and cook 3 minutes, or until tender.  Stirring occasionally.
  4. Add garlic, spice mixture & cook 1 minute.
  5. Add broth, tomatoes & bring to a boil.
  6. Pour mixture into large (5-6 quart) crockpot.
  7. Stir in lentils & potatoes. Cook on high 4-5 hours, or on low 8-10 hours.
  8. Stir in pepper flakes & lemon juice just before serving.

Tips/Notes

Drizzle some plain non-fat Greek yogurt in your bowl after cooking to give it a creamy flavor.
