Ginger Pork Stir-Fry

Ingredients

  • 2 cups instant brown rice
  • 1 Tbsp olive oil
  • 1 lb pork chops, cubed & fat trimmed
  • 1 small red onion, slivered
  • 3 cups frozen stir-fry vegetable mix
  • 2 large radishes, thinly sliced
  • 1 tsp ground ginger
  • 1/4 cup white vinegar

Preparation

  1. Cook rice according to package directions. Set aside.
  2. In a large skillet, heat oil over medium-high. Add pork & onion; cook 5 minutes each side or until pork is done & juices run clear.
  3. Add vegetables to skillet & cook 3 minutes or until vegetables are tender.
  4. In a small bowl, mix ginger & vinegar. Pour over vegetables, reduce heat to medium & simmer 5 minutes, stirring occasionally.
  5. Serve stir-fry over rice.
