Applesauce Pork Chops with Rice
Non-stick cooking spray
4 (4 oz) boneless, thin-sliced pork chops, fat trimmed
1 large red apple
1 1/2 cups unsweetened applesauce
1 cup water
1 small onion, diced
1 Tbsp Worcestershire sauce
1/2 tsp garlic powder
1/4 tsp pepper
2 cups uncooked instant brown rice
2 tsp cornstarch
1 Tbsp cold water
Coat a large skillet with cooking spray & heat over medium-high. Add pork chops & brown on both sides.
Cut four thin slices from apple & set aside. Core & dice remaining apple.
Add diced apple, applesauce, water, onion, Worcestershire sauce, garlic powder & pepper to skillet. Mix well, cover & simmer 25 minutes.
Meanwhile, prepare rice according to package directions.
In a small bowl, mix cornstarch & cold water until smooth. After 25 minutes, stir into skillet. Bring to a boil & cook 2 minutes, stirring throughout.
Plate pork chops over rice, top with apple slice & serve immediately.
