Ingredients

  • Non-stick cooking spray
  • 1 cup frozen onion & bell pepper mix
  • 1 1/2 cups 33% less sodium chicken broth
  • 2 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • 1 cup chopped frozen okra
  • 1/2 cup uncooked instant brown rice
  • 1 tsp garlic powder
  • 1 (14.5 oz) can no-salt-added diced tomatoes, drained

Preparation

  1. Coat a medium saucepan with cooking spray & heat over medium-high. Cook onion & pepper mix 5 minutes, stirring occasionally.
  2. Add broth, oregano & cayenne pepper. Bring to a boil. Reduce heat, cover & simmer 10 minutes.
  3. Add okra, rice & garlic powder. Cover & cook 5-10 minutes, until rice is tender & liquid is absorbed.
  4. Add tomatoes & mix well. Let stand 5 minutes before serving.

Tips/Notes

Fresh okra can be bought during the months of July thru September. During other months, buy okra in the frozen section of your local grocery store.
