Non-stick cooking spray
1 cup frozen onion & bell pepper mix
1 1/2 cups 33% less sodium chicken broth
2 tsp dried oregano
1/4 tsp cayenne pepper
1 cup chopped frozen okra
1/2 cup uncooked instant brown rice
1 tsp garlic powder
1 (14.5 oz) can no-salt-added diced tomatoes, drained
Coat a medium saucepan with cooking spray & heat over medium-high. Cook onion & pepper mix 5 minutes, stirring occasionally.
Add broth, oregano & cayenne pepper. Bring to a boil. Reduce heat, cover & simmer 10 minutes.
Add okra, rice & garlic powder. Cover & cook 5-10 minutes, until rice is tender & liquid is absorbed.
Add tomatoes & mix well. Let stand 5 minutes before serving.
