New Year’s Barley Black-eyed Peas

Ingredients

  • 1 Tbsp olive oil
  • 3 cups frozen onion, bell pepper & celery mix
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can 33% less sodium chicken broth
  • 1 cup quick-cooking barley
  • 1 Tbsp dried Italian seasoning
  • 2 tsp lemon juice
  • 1/4 tsp cayenne pepper
  • 2 (15 oz) cans black-eyed peas, drained & rinsed

Preparation

  1. In a large skillet, heat oil over medium.  Add frozen vegetable mix & cook 3-4 minutes, or until warm. Drain excess water.
  2. Add garlic, broth, barley, Italian seasoning, lemon juice, pepper & bring to a boil.
  3. Reduce heat, cover & simmer 10-15 minutes, or until barley is tender. 
  4. Add black-eyed peas & 3-4 minutes, or until warm.
  5. Serve hot.
