Sunshine Hummus Pasta

Ingredients

  • 8 oz uncooked whole-wheat pasta
  • 16 oz roasted red pepper hummus
  • 2 Tbsp water
  • 10 oz frozen broccoli florets
  • 2 bell peppers, sliced (any color)

Preparation

  1. Cook pasta according to package. Set aside
  2. In a microwave-safe bowl, mix broccoli, bell peppers & water. Cover with plastic wrap & microwave 3-5 minutes, or until vegetables are slightly tender.
  3. In a large bowl mix steamed vegetables, pasta & hummus. Serve immediately.

Tips/Notes

This dish is also great served cold! Let it chill in the refrigerator for a couple of hours before serving.
