Peachy Pecan Spinach Salad
1/2 cup pecans
2 ripe peaches, wedged
4 cups baby spinach
1 lemon, juiced
2 Tbsp olive oil
1/4 tsp pepper
1/2 cup shredded parmesan cheese
In a large bowl, add spinach, peaches & pecans. Mix well.
In a small bowl, combine lemon juice, oil & pepper. Mix well.
Stir in dressing with salad. Mix well.
Top with cheese and serve immediately. For a more intense flavor refrigerate 1-2 hours before serving.
