Cheesy Southwest Mashed Potatoes

Ingredients
  • 3 lbs red potatoes, diced
  • 1 Tbsp olive oil
  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeño, finely diced
  • 2 (4 oz) cans chopped green chiles, drained
  • 3/4 cup 1% low-fat milk
  • 1/4 cup plain non-fat Greek yogurt
  • 1 1/2 cups shredded reduced-fat cheddar cheese
  • 1/2 tsp chipotle pepper powder
Ingredients
  • 3 lbs red potatoes, diced

  • 1 1/2 cups shredded reduced-fat cheddar cheese
  • 1/2 tsp chipotle pepper powder
Preparation
  1. Fill a large stockpot with water, add potatoes & bring to a boil. Reduce heat to medium & simmer until potatoes are fork-tender. Drain, return potatoes to stockpot & set aside.
  2. Meanwhile, in a large skillet, heat oil over medium-high. Add onion & sauté 5 minutes or until translucent, stirring occasionally.
  3. Stir in bell peppers & jalapeño. Sauté another 3-5 minutes. Stir in chilies & remove from heat.
  4. Add milk & yogurt to the potatoes. Mash thoroughly. Add cheese, onion mixture & chipolte pepper to stockpot. Mix well. Add additional milk if needed.
