Lemon Basil Summer Squash

This flavorful no-cook side dish recipe can be prepared in 30 minutes or less.


  • 2 large zucchini
  • 2 large yellow squash
  • 2 Tbsp olive oil
  • 1 lemon, juiced
  • 1/2 tsp pepper
  • 2 cloves garlic, minced
  • 1/2 cup chopped fresh basil
  • 2 Tbsp chopped fresh oregano
  • 1/2 cup shredded parmesan cheese


  1. Use a vegetable peeler to shave zucchini & squash into ribbons. Put into a large bowl.
  2. In a small bowl, combine oil, juice, pepper & garlic. Mix well.
  3. Drizzle oil mixture over vegetables. Add basil & oregano. Toss to combine.
  4. Top with cheese & serve immediately.


Squash such as zucchini & yellow squash are high in vitamin C & low in calories!
