Ingredients
- 4 medium sweet potatoes
- 1/2 cup 1% low-fat milk
- 1 Tbsp olive oil
- 1/4 tsp black pepper
- 1/4 tsp cinnamon
- 1/2 tsp garlic powder
- 2 tsp minced fresh thyme
Preparation
- In a microwave-safe bowl, add whole potatoes & cover with water. Microwave 10-12 minutes until fork-tender.
- Caution, bowl will be hot. Drain water & return potates to bowl. Using a fork or potato masher, smash potatoes, adding milk gradually.
- Stir in oil, pepper, cinnamon & garlic powder. Mix well.
- Top with thyme & serve.
Tips
