Zucchini Summer Salad

This light and easy summer salad recipe can be prepared in well under 30 minutes.


  • 2 large zucchini, thinly sliced
  • 1 medium cucumber, thinly sliced
  • 1 medium green bell pepper, diced
  • 1/4 cup ONIE Homemade Ranch Dip


  1. In a large bowl, thinly slice zucchini, cucumber & bell pepper. Mix well.
  2. Add ranch dip & mix well.
  3. Serve immediately or for a more intense flavor, refrigerate salad for 1-2 hours.


Enjoy this meal on its own or with some whole-grain crackers!
