Frijoles Charros

Ingredients

  • 2 cups instant brown rice
  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small yellow onion, diced
  • 1 tsp cumin
  • 1/2 lb cooked lean ham, diced
  • 1 poblano pepper, diced
  • 1 (32 oz) carton unsalted chicken broth
  • 1 (10 oz) can no-salt-added diced tomatoes with green chiles, drained
  • 1 (15.5 oz) can no-salt-added pinto beans, drained & rinsed
  • 2 cups minced fresh cilantro

Preparation

  1. Prepare rice according to package instructions. Set aside. 
  2. In a large saucepan, heat oil over medium. Add garlic, onion & cumin. Cook 3-5 min or until onions are tender. Add ham, pepper & broth. Mix well. Cook 3-5 min or until pepper are crisp-tender. 
  3. Add tomatoes & beans. Cook 5-7 min. Add cilantro & cook 3-5 min. 
  4. Serve beans over rice. 

Tips

If you like it spicy, sub in a spicier pepper, like jalapeno.
