Pineapple Pork Chops

This sweet and savory recipe can be prepared in 30 minutes or less.


  • 1 1/2 cups instant brown rice

  • 2 Tbsp canola oil

  • 1 lb boneless, pork chops, fat trimmed

  • 1 tsp garlic powder 

  • 1 tsp black pepper  

  • 1 (8 oz) can pineapple chunks in juice, undrained

  • 1 cup *Chunky Homemade Salsa

  • 1/2 cup minced fresh cilantro, divided


  1. Prepare rice according to package directions. Fluff with a fork & set aside.

  2. In a large skillet heat oil over medium-high. Add pork chops & sprinkle with garlic & pepper. Cook 4-5 minutes per side or until golden brown.

  3. Add pineapple, salsa & 1/4 cup cilantro. Bring to a boil. Reduce heat, cover & simmer 12-15 minutes or until cooked through, flipping pork chops halfway through.

  4. Serve over rice & top with remaining cilantro.
