Curried Egg Salad & Cucumber Sandwiches

A new take on egg salad that your family is sure to love!


  • 6 large hard-boiled eggs
  • 2/3 cup plain, non-fat Greek yogurt
  • 1/3 cup olive oil mayonnaise
  • 1 Tbsp curry powder  
  • 1 Tbsp ground cumin
  • 1/2 cup raisins
  • 12 slices 100% whole-wheat sandwich bread, toasted
  • 1 medium cucumber, thinly sliced
  • 12 romaine lettuce leaves


  1. In a large bowl, whisk together mayo, yogurt, curry powder & cumin. Stir in eggs & raisins. Mix well.
  2. Assemble sandwiches with toast, cucumber slices, egg salad, & lettuce.


Serve as a whole sandwich or cut into bite-sized pieces for a family gathering.
