Chimichurri Sauce

A no-cook sauce made with fresh vegetables and herbs that is perfect to use to marinate or baste meat, poultry & seafood, or serve fresh over any dish.

Ingredients

     1/2 cup olive oil

     2 Tbsp red wine vinegar

    1/2 cup minced fresh cilantro

     1/4 cup minced fresh parsley

     4 cloves garlic, minced

     2-3 dried red chilies, crushed

     1 Tbsp minced fresh oregano

     1/2 tsp pepper



Preparation

  1. In a large bowl, whisk together oil & vinegar. Add all remaining ingredients. Mix well.
  2. Set aside 5-10 minutes before using for flavor to develop. For a more intense flavor, made ahead & refrigerate up to 24 hours.
  3. Use sauce to marinate or baste meat, poultry & seafood, or serve fresh over any dish.

Tips

Too spicy? Try red pepper flakes instead of dried chiles.
