Greek Shrimp with Tomatoes, Feta & Orzo

Ingredients

  • 1 cup orzo

  • 2 Tbsp minced fresh mint, divided

  • 1 Tbsp olive oil

  • 1 small onion, diced   

  • 1 tsp paprika  

  • 1 Tbsp minced fresh oregano

  • 1 (8 oz) can no-salt-added tomato paste

  • 1 (12 oz) bag frozen peeled & uncooked shrimp

  • 1 (10 oz) bag fresh spinach

  • 1 (2.25 oz) can sliced black olives, drained

  • 3 Tbsp crumbled feta cheese


Preparation

  1. Cook orzo according to package directions. Add 1 Tbsp mint, mix well & set aside.

  2. In a large deep skillet heat oil over high. Add onion, paprika & oregano. Cook 1-2 minutes.

  3. Add shrimp and tomato paste. Cook 10 minutes or until shrimp is cooked through. 

  4. Add spinach & olives. Cook 1-2 minutes or until spinach is wilted.

  5. Serve over orzo topped with feta & mint.
