Chipotle Black Bean Salsa

This easy to make salsa can be prepared in 10 minutes, is packed full of fresh vegetables and black beans, and is the perfect side dish to bring to any party.


     1 medium onion, finely diced

     3 large tomatoes, diced

     2 jalapeños, finely diced

    1 (15.25 oz) can no-salt added black beans, drained & rinsed

     1 1/2 cups frozen corn

     1 lime, juiced

     1 tsp chipotle powder

     ¼ cup minced fresh cilantro

     2 cloves garlic, minced


  1. In a large bowl, add onion, tomatoes, jalapenos, beans & corn. Toss to combine.
  2. Add lime juice, chipotle powder, cilantro & garlic. Mix well.
  3. Serve immediately. For a more intense flavor, refrigerate salad 1-2 hours before serving.


Make your salsa spicy and sweet by adding pineapple.
